3 centuries we live on this earth ...
When my ancestors arrived, there were bare fields ...
They built a family estate here and began to grow grapes and engage in winemaking ..
So we lived for generations .. In childhood, I spent all the time here helping my grandfather and father ..
I have imbibed the spirit of winemaking and creation from an early age.
Many years have passed and that perky little boy brought family business to a new level!
We built a modern winery, whose outlines repeat the silhouettes of our regions .. this is a new round of development of the work of my entire large family!
In the spring, when the snow is falling, we weed ridges of vineyards and plant new ones .. carefully prepare each bush .. the taste of our wine also depends on this ..
In summer, we abundantly water the vineyards and fertilize with natural compost.
At the beginning of autumn, we take samples from berries in our laboratory - We must wait until the grapes reach the desired taste and are ready for collection.
We celebrate the beginning of the harvest - white varieties are harvested first - they are the first to be processed.
Later, others gather ..
White grapes are separated from the crests, and black go along with them - this adds taste to different varieties of wines
After the berries fall into the fermentation tank, where the whole masses are infused and periodically mixed with air to accelerate the fermentation process.
At this point, the sugars contained in the grapes are converted to ethyl alcohol. Yeast reacts with sugar (which has accumulated in grape juice), and turns it into carbon dioxide (as well as ethanol).
We pump the wort from the bottom of the container over the surface of the vessel - it is saturated with oxygen from the air - this creates the conditions for the reproduction of yeast cells.
The fermentation process takes 2-3 weeks, then maceration occurs - the formation of a bouquet.
We have 200 components. The main ones are water, ethyl alcohol, acetic acid and tartaric acid - which make up 95-98% of the mixture. The remaining 2-5% are 196 components. Here everyone has their own secrets and technologies on how to get the necessary product. At the same time, he never turns out the same.
Then the wine goes to storage - we lower it into our cellar
The wine is guided .. Young wines mature from three months to three years
Here, in the cellar, we created a family restaurant and a tasting room so that everyone could appreciate our product ...
When spring comes, everything repeats again ...
