I used 3ds Max for modeling, RizomUV for UV, Marmoset Toolbag for baking and rendering, texturing in Substance Painter, editing in Photoshop. Low poly made for a good display in the portfolio, for real projects I would use fewer triangles in accordance with the wishes of the technical director. One Texture set for everything.
